Soil Composition: The soil is rich in calcium carbonate, moderately alkaline, and rich in potassium.
Cultivation: 15 stremmas – organic farming
Yield per Stremma: 600 kg/stremma
Variety: Merlot
Vinification: Classic red winemaking process with maceration. After destemming, the grapes are turned into must and transferred to a stainless steel fermenter. The contact of the juice with the skins, and thus the extraction of anthocyanins and tannins, takes place alongside alcoholic fermentation and lasts 7–10 days. The young wine is then transferred to another stainless steel tank, while the pomace is sent to the press. A portion of the press wine is blended with the free-run wine, and the final product remains in stainless steel tanks for at least 8 months of maturation. Bottling follows.
Aging Potential: 5–8 years
Organoleptic Characteristics:
A rich red wine with a deep ruby color and violet highlights. Aromas of red fruits, strawberry, blackberries, and cassis dominate. On the palate, it is full-bodied with mild acidity and soft tannins, while the finish is fresh and fruity.
Food Pairing Suggestions:
Served at 14–15°C and pairs well with mild dishes without intense spices. As low temperatures do not harm it, it is an ideal companion during warm summer days with appetizers from Greek Mediterranean cuisine. Mild cold cuts as well as soft white cheeses also make an excellent pairing.
