LOW INTERVENTION

Cultivation area: Arma Thebes 

Altitude: 250 meters 

Soil composition: The soil is rich in calcium carbonate, moderately alkaline, rich in potassium. 

Variety: Malagouzia 

Vineyard & Cultivation: Small, selected vineyard of 4 acres, organically cultivated, with a low yield per acre (700 kg/acre), which gives aromatic intensity and purity of expression. 

Yield per acre: 700 kg/acre 

Vinification: Careful white vinification at controlled temperature, aiming to preserve the natural aromaticity and freshness of the variety. Remaining with the fine lees for greater volume and texture 

Organoleptic Characteristics: Bright lemon color. On the nose, aromas of white flowers, citrus, stone fruits and subtle herbal notes emerge. On the palate, it is expressive and balanced, with lively but well-crafted acidity, an oily texture and a cool, persistent aftertaste. 

Food Pairings: Served at 8 10°C. Accompany seafood, fatty fish, white meats with aromatic herbs, as well as dishes with Mediterranean vegetables.
