Wining: A “red vinification with maceration” process is followed on the grapes that have already been destemmed. Alcoholic fermentation and tannin extraction lasts 7-10 days. The new wine, together with the pressed wine – results from the pressing of the marc which is then matured in old French oak barrels 225 for 6 months. When the wine is bottled unfiltered it remains in the bottle for at least 6 more months before being released for consumption.
Time for Aging: 4-6 years
Organoleptic Characteristics: This is an orange wine with dark copper highlights. The nose is dominated by nuts, earthy notes and mineral aromas. On the palate, the tannins are evident as is the acidity. The wine definitely needs decanting as there is sediment in the bottle.
Food Pairing: Served at 12-14°C and goes well with fatty cheeses and meats, as well as game birds. Ideal pairing with lamb in a casserole accompanied by mushrooms and sweet potato puree.
