Soil composition: The soil is rich in calcium carbonate, rich in potassium and moderately alkaline.
Cultivation: 15 acres – organic farming

Variety: Merlot
Winemaking: Classic red winemaking process with maceration. After destemming, the grapes, in the form of grape pulp, are taken to a stainless steel winemaker. Alcoholic fermentation and extraction of anthocyanins and tannins lasts 7-10 days. The new wine is then aged in stainless steel tanks and in new French oak barrels of 225 and 300 liters, successively, for 12-14 months. Once the wine is bottled, it remains in the bottle for at least 6 more months before being released for consumption.
Αging Potential: 8-10 years – Mandatory decanting into a carafe half an hour before drinking.
Organoleptic Characteristics: This is a purple wine of a high concentration. On the nose, it gives aromas of black fruits, dried plum, tobacco, chocolate and vanilla. On the palate, soft tannins, mild acidity and a full body prevail with an aftertaste of sweet spices.
Food Pairing Suggestions: Served at 16-18°C it accompanies red meats and game. Ideal combination with rabbit or beef stew but also a juicy fillet or steak with three pepper sauce.
